For such pancakes, the main role is played by the quality and taste of caviar. I admit, it was always very difficult for me to choose her. You go into a store, the shelves are bursting with thousands of different names and manufacturers. And how can you understand and figure out where the real caviar is and where the fake is?

Over time, through trial and error, I have developed some rules for myself that help me buy a high-quality and original product.

I buy caviar only in tins . I never buy loose caviar. Firstly, it is not clear when, under what conditions and by whom it was made. Perhaps the supermarket bought it cheap from some “Uncle Vasya”, who salts it in a home trough and in unsanitary conditions. I think this is all clear.

I make sure to check all the labels on the jar . What exactly should you pay attention to?

On the word "imitated". If it is indicated on the can, then it is artificial caviar. It does not cause any harm to health, but its price should be appropriate.

A kilogram of real caviar will cost from 1,200 rubles and more, the price of artificial caviar is an order of magnitude lower.

Next I look at the composition . It must indicate the name of the fish from which the caviar is produced - “salmon caviar”.

In addition to fish, the composition contains vegetable oil, salt, and preservatives (without them, caviar can be stored for a very short period of time). No more components!

But the fake may also contain algae, fish oil, the meat component of shrimp (read “waste”), etc.

The amount of protein and fat must also be indicated. The original always has more protein and less fat, while the fake is the opposite.

Manufacturer . I choose only those who process fish in the places where they spawn, and these are Sakhalin and Kamchatka. They produce red caviar from May to October, i.e. during the spawning period! That's all!

This means that the production date on the jar must be indicated within this time frame. Not earlier, not later.

If the terms do not match, then it is either a fake or simply a product made from frozen caviar. And its quality, as you understand, leaves much to be desired. Usually it is liquid, the eggs do not hold their shape and the taste is bitter.

Well, that seems to be all the wisdom. I hope my tips will help you choose high-quality and tasty caviar.

Tender pancakes with red caviar

Now I propose to prepare the classic pancakes that I usually cook. They are simple, but very tasty and tender. Just what you need for such a spicy and delicious product.

  • 6 eggs (if small ones I put 7 pieces);
  • 450 gr. flour;
  • 1 tbsp. l. Sahara;
  • 1 l. milk;
  • 2-3 tbsp. l. raises oils;
  • 0.5 tsp. salt;
  • 100 gr. red caviar;
  • 100 gr. butter to grease pancakes.

Beat the eggs, pour in the milk and mix.

Pour flour into this mixture and mix with a mixer.

Add milk little by little, stirring all the time to avoid lumps. The mass should become like liquid sour cream. Add vegetable oil and let the dough sit for about 30 minutes.

Fry the pancakes on both sides until they are golden brown.

Coat each of them with butter, this will make them tender, soft, with a pleasant creamy taste.

Spread a little red caviar evenly onto the surface of the pancake. Roll into a tube, cut diagonally, place on a serving plate.

Pancakes with red caviar and cream cheese

Cream cheese is ideal for caviar filling. You can lubricate the entire surface of the pancake with it. If you don't like the filling too rich, then apply a thin strip.

  • 1 stack flour (200 gr.);
  • 3 eggs;
  • 1 tbsp. l. Sahara;
  • 1/2 tsp. salt;
  • 1 glass of milk;
  • 1 tbsp. sunflower oils
  • 1 tbsp. water (200 gr.);
  • 2 table. l. with a heap of sour cream;
  • butter for greasing pancakes;
  • 50 gr. red caviar.

Egg, sugar, salt, grind. Add flour, stir.

Gradually add milk to this mixture. Stir until smooth.

Add vegetable oil, water, sour cream, knead the dough. Make sure there are no lumps or clots in it.

Bake pancakes on both sides for 1 minute. with each one. Don't overcook to prevent the edges from becoming dry and breaking.

Immediately brush with a piece of butter while they are still hot. Cool.

Spread a little cream cheese on half the pancake and add a thin layer of caviar. Roll into a tube, cut in the middle, place on a plate, garnish with dill.

How to beautifully wrap pancakes with caviar

See how easy it is to stuff pancakes with cod caviar, and then decorate them with caviar of different colors.

1. To do this, take a ready-made pancake and place it on a plate. Spread the top of it with mixed cod roe and sour cream in an even layer.

Instead of cod caviar, you can use pollock, capelin or pike caviar.

2. Roll the caviar-stuffed pancake into a tube and let it sit for about 1 hour. So, make a lot of spring rolls.

3. Cut the stuffed pancakes into pieces (barrels). Pancake barrels can be placed on a dish and served like that. But we will also decorate them as we wish.

5. Caviar made from algae is always sold and it is much cheaper than the real thing. It is harmless and you can eat it.

Pancakes with curd cheese and caviar

Sometimes I replace cottage cheese with a mixture of cottage cheese and cream cheese. I can also add sour cream to it and it turns out simply gorgeous!

  • 200 gr. flour;
  • 400 ml. milk;
  • 2 eggs;
  • 1 tsp baking powder without top;
  • 1 tbsp. l. Sahara;
  • 0.5 tsp. salt;
  • 4 tbsp. l. refined vegetable oil;
  • 200 gr. curd cheese;
  • 100 gr. red caviar;
  • a little fresh parsley and dill.

Beat sugar, salt, eggs with a whisk. Add milk and stir. Mix flour with baking powder. Pour into the egg mixture, stirring constantly with a whisk.

Lastly, pour in the vegetable oil and stir everything.

Bake all the pancakes on both sides in a hot frying pan.

Mash the cream cheese with a fork. Finely chop the dill.

Mix well into a homogeneous mass, lightly salt.

Spread the pancake with prepared cheese. Cover it with a second pancake on top. Apply a layer of cheese again and roll up.

Cut into 3-4 cm pieces. Place cut side up on a plate. Place 1 partial teaspoon on top. caviar.

Variety of flavors

50 ml vegetable oil, 50 gr. butter, 50 gr. sugar, 3 eggs, 500 ml milk, 250 gr. wheat flour, 200 gr. red caviar, salt.

Preparation:

Break the eggs into a deep bowl, add sugar, salt and 250 ml of milk. Whisk the resulting mixture. Gradually add all the flour to the dough, mixing thoroughly and trying to avoid the appearance of lumps. When all the flour is in the dough, add the remaining milk and vegetable oil. Stir again. Bake pancakes from the resulting dough. Place 1 heaped teaspoon of caviar into each pancake, distribute evenly throughout the pancake and wrap it in a corner.

Pancakes with caviar and tomatoes

Ingredients:

several thin pancakes, 200 gr.
red caviar, 50 gr. frozen butter, 1 tbsp. sour cream for each pancake, 1 cherry tomato for each pancake, a bunch of green onions. Preparation:
Reduce the diameter of each pancake by about a couple of centimeters to form an even circle. Finely chop the onion. Grease the middle of a small pancake with sour cream, add 1 teaspoon of caviar in a heap, add a little green onion. Cut the cherry tomato into 8 pieces and place them around the mound of caviar. Carefully gather the edges of the pancake and tie them with pancake ribbon from the cut edge. Grate the frozen butter on a coarse grater. Place the pancake bags on a plate, sprinkle with grated butter and garnish with green onions.

Ingredients:

2 eggs, 1 tsp. Almette curd cheese, 2-3 tbsp. flour, ½ tsp. baking powder, ½ tbsp. milk, 2 tbsp. vegetable oil, butter, caviar.

Pancakes with cod roe

Ingredients:

5 eggs, ½ tsp. sugar, 1 tsp. grated lemon zest, 1 tbsp. flour, 2 tbsp. milk, 1 ½ tbsp. water, vegetable oil, bunch of lettuce leaves, 50 gr. cod roe, 3-4 tbsp. mayonnaise, 1 tsp. hot ketchup, ½ tbsp. cream, 1 bell pepper, ½ tsp. paprika, salt.

Preparation:

Grind 3 eggs, sugar and salt with finely grated zest, add milk and water and stir everything thoroughly. Stirring constantly, add flour and ¼ tbsp. vegetable oil. Mix thoroughly, trying to remove all lumps. Bake pancakes from the resulting dough. Separately, beat the remaining 2 eggs with cream and paprika, add a little salt. Pour the resulting mixture into a hot frying pan greased with vegetable oil. Fry the omelette on both sides until golden brown, then cool and cut into small pieces. Cut the bell pepper into thin strips. Mix caviar with mayonnaise and ketchup. Wash the lettuce leaves and dry them. Grease the pancakes with a mixture of caviar and mayonnaise, top with lettuce, bell pepper and egg omelet. Roll the pancakes into rolls, cut off the uneven edges and leave in the refrigerator for 30 minutes.

Ingredients:

several pancakes, 1 avocado, 1 jar of caviar, cream cheese, rice.

Preparation:

Spread each pancake with cream cheese and place a thin layer of rice on top. Cut the avocado in half, remove the pit and cut into very thin slices. Place avocado slices on rice, add caviar and distribute it evenly over the pancake. Roll the pancake into a tight roll, cut off the uneven edges and cut each roll into 3-4 pieces. Decorate each resulting roll with a small amount of caviar.

cottage cheese, greens, 2 tbsp. sour cream, 200 gr. lightly salted salmon, 100 gr. red caviar. Preparation:
Rub the cottage cheese through a sieve or grind in a blender. Finely chop the greens and add them to the cottage cheese, add sour cream and mix thoroughly. Cut the salmon into very small pieces. Grease each pancake with curd mixture, place lightly salted salmon on top and spread it over the pancake in a thin, even layer. Roll each pancake into a roll and cut each roll into 3 parts. Place ½ tsp on each portion. caviar.

I especially like this recipe. The pancakes turn out tender, airy, soft and literally melt in your mouth.

  • 250 gr. flour;
  • 2 tsp. Sahara;
  • 2-3 tbsp. l. sunflower oils;
  • 150 ml. milk;
  • 150 mol boiling water;
  • 1 egg;
  • 1/3 tsp salt;
  • a couple of sprigs of fresh parsley;
  • 200 gr. cream cheese;
  • 150 gr. red caviar;
  • 200 gr. lightly salted salmon.

Beat the eggs well with sugar and salt. When a fluffy foam appears, add milk and gradually add flour. Mix well.

When the dough is homogeneous and without lumps, pour in boiling water. Mix again and leave the dough to swell for 15-20 minutes.

Bake pancakes as usual on both sides.

Thinly slice the fish into long strips. Finely chop the greens and mix with the butter cream. If desired, you can add fresh cucumber to the filling.

Coat the entire pancake with the cheese mixture, lay out the salmon strips evenly. Roll up. Leave for 30 minutes. in the refrigerator.

Cut into pieces and decorate with red caviar. You can also wrap the pancakes in a small bag.

Pancakes with black caviar

We eat black caviar very rarely, only on very, very big holidays. Paired with pancakes it turns out great.

I don’t add anything else to the filling except black caviar. I believe that any cheese or cottage cheese can only “overwhelm” its unsurpassed taste. The only thing is that I can literally add a drop of cream to the pancake and that’s it.

I also advise you to do the same in order to fully experience the exquisite taste of this delicacy!

  • 2 stacks milk;
  • 30 gr. butter (melt);
  • 1.5-2 cups flour;
  • 4 eggs (5 pieces are possible);
  • 1/3 tsp. soda;
  • 2 tbsp. l. sunflower oil;
  • 0.5 tsp salt;
  • 100 gr. black caviar.

Mix sugar, butter, salt, eggs, vegetable oil with a whisk. Add milk, mix together.

Add flour, baking soda, 1/2 cup hot milk, stir.

Fry the pancakes on both sides until browned.

Cool the pancakes. Fold into a cone. Put 1 tsp in each. caviar. Can be served at the holiday table!

Red caviar filling with whipped cream

Tender, airy, delicious! What else can you say about this recipe when it includes whipped cream? Be sure to try this filling, you won’t go wrong!

  • 500 ml cream 33-35% fat;
  • 1 tsp. salt;
  • 1 tsp. lemon juice;
  • 1 tsp. lemon zest;
  • jar of red caviar.

Cool the container in which you will whip and cream well. I put them in the refrigerator overnight. I also place the cream and bowl in the freezer 15-20 minutes before whipping. You can also place the bowl in which you whip the cream in a pan of cold water and add ice cubes to it.

After I pour the cream into the bowl, I also cut the bag itself and carefully scrape it out with a spoon. Very often, the fat from the cream collects at the top of the package and it turns out that you are pouring out only milk, which cannot be frothed.

Pour cream, add salt, lemon juice. You can take orange juice and zest.

Beat with a mixer at low speeds first, and when the mass begins to thicken, increase the speed.

A pattern should appear on the cream, which will become clearer and more prominent.

At the very end, add the lemon zest and mix well with a spatula. Stuff pancakes with red caviar.

Roll into rolls or barrels and squeeze whipped cream out of a pastry bag onto each one. We decorate the top with caviar.
