To prepare tubes, unlike one or another large lavash roll, you need to take not oval, but rectangular or square lavash.
Ingredients:
- Lavash – 1 package (2 sheets),
- Mashed potatoes – 400 gr.,
- Green onions – 100 gr.,
- Eggs – 4 pcs., (2 eggs for filling and two for frying the tubes),
- Hard cheese - 200 gr.,

How to make “Pita Rolls”
Prepare the following ingredients. Preheat the oven to 200 degrees.
Unfold the pita bread on the work surface and cut it into strips 10-15 cm wide - this will be the length of the tubes. Wind the ribbons two or three times onto a metal tube or rod, or a piece of foil, cut off the remaining part of the ribbon and place it on a baking sheet or in a mold, seam side down.
Lightly melt the butter and brush the lined tubes with it. Place the baking sheet in the oven.
Bake for about 10 minutes and turn off the heat. Remove the mold, cool the dish slightly and carefully remove each metal rod before the tube has completely cooled. As soon as it cools down, it will break and you will not be able to get the metal workpiece.
Place the finished lavash tubes on a plate and fill them with whatever you see fit. In any case, the dish can be made either sweet, filling them with: whipped cream, jam, preserves, or savory: pate, salads, sausage cuts.
Lavash tubes fried with minced meat. Lavash rolls with minced meat
There are many recipes using Armenian lavash. One of them is tubes stuffed with minced meat. They turn out golden brown and crispy, and taste like chebureks or belyashi.
Ingredients:
- Minced meat (pork and beef) – 600 gr.
- Lavash – 2 pcs.
- Pickled cucumber – 2 pcs.
- Onions – 1 pc.
- Bell pepper – ½ pc.
- Egg (boiled) – 2 pcs.
- Cheese – 100 gr.
- Salt pepper
- Vegetable oil for frying
Place the minced meat in a hot frying pan and fry, breaking up any lumps with a spatula. Add finely chopped onion to it and fry until transparent.
Following the onion, add finely chopped bell pepper (I used frozen) and finely chopped pickled cucumber.
Add salt and pepper to taste. At the final stage of preparing the filling, add a finely chopped egg and mix everything thoroughly.
The filling for the lavash is ready. Now let's get to the pita bread.
Cut the pita bread into small rectangles, sprinkle them with finely grated cheese and lay out the meat filling.
Roll the pita bread into a tube, place it in a frying pan heated with vegetable oil and fry on both sides.
You can serve lavash tubes with minced meat either hot or cold.
Lavash rolls with filling - recipe
After all the ingredients have been prepared, you can begin preparing the fried lavash tubes with filling. Let's start with the filling. If the mashed potatoes were cooked several hours before making the tubes, then it is advisable to heat it in the microwave and pass it through with a masher again so that it becomes homogeneous and warm again.
In addition to mashed potatoes, we will need hard cheese, herbs and eggs for the filling. Grate the boiled eggs on a fine grater.
Grate hard cheese on a medium grater.
Wash and finely chop the green onions. In addition to onions, you can add dill and parsley to the filling. Greens won't hurt.
Place onion, eggs and cheese in bowl with mashed potatoes.
Season with salt and pepper. After this, the potato filling with cheese and eggs to fill the tubes must be mixed.
Now that the filling is ready, you can start preparing the pita bread. Unwrap the pita bread. Cut it into rectangles measuring approximately 15 by 20 cm.
So that the pita bread can be rolled into a tube, moisten it with cold water using a pastry brush.
Place the filling on the wide side of the lavash rectangle, as in the photo.
Starting from the side where the filling is, roll the pita rectangle into a tube.
In this way, prepare all the other lavash tubes filled with mashed potatoes, cheese and eggs.
Beat the eggs with a pinch of salt. Moreover, you can add a little cold water or milk to the eggs.
Heat a frying pan with sunflower oil. The filled lavash tubes, like the lavash triangles, now need to be dipped into beaten eggs.
Place in a frying pan.
Fry the lavash tubes on one side until golden brown, then turn them over to the other side. Fry them on this side as well.
Serve the finished tubes hot immediately. Enjoy your meal. I will be glad if you liked this recipe for lavash rolls with filling and find it useful. To get lower-calorie lavash tubes, in this case it is better to bake them in the oven. This is also very easy to do.
Place the filled tubes on a baking sheet greased with vegetable oil in rows. Brush them with beaten egg too. To make them look more appetizing, you can sprinkle them with black cumin or sesame seeds. Place in an oven heated to 180 degrees. Bake them for at least 15 minutes until golden brown. Such fried lavash tubes with filling in the oven should also be served hot, since when they cool down, they lose their taste. I also recommend making a lavash roll with cottage cheese and herbs.
Lavash roll with raw minced meat. Do-it-yourself hot lavash roll with minced meat in the oven
Instead of potatoes stewed with meat, which has firmly established itself at our celebrations as a “crown” dish, we suggest serving meatloaf baked in the oven as a main course. And in order not to bother with its base for a long time, you can use unleavened Armenian lavash bread.
Ingredients
- Armenian thin lavash – 1 large sheet.
- Minced chicken or pork – 400 g.
- Medium size onion – 1 pc.
- Small carrots - 1 root vegetable.
- Large chicken eggs – 1 pc.
- Greens – 1 bunch.
- Salt – 1/3 tsp.
- Ground black pepper – 1/3 tsp.
- Sesame or flax seed – 1 tsp.
- Vegetable oil without aroma – 1.5 tbsp.
How to bake delicious meatloaf in pita bread in your home oven
We prepare the meat base of the treat in the same way as in the first case - we clean, chop and stew the vegetables, add minced meat and cook in a covered frying pan, seasoned with spices.
After removing the filling from the heat, cool it and apply it evenly over the entire area of the pita bread.
Spread thin bread on the table and evenly spread minced meat on it, sprinkle chopped herbs on top.
Secrets of the most delicious meatloaf
- In this case, we will need exactly a meter-long sheet of pita bread about 40 cm wide. It is most convenient to roll it into a roll, and it will completely fit on a standard baking sheet.
- If the minced meat turns out to be a bit dry (this happens with chicken products), it can be made more juicy by beating in 1 egg (it is not indicated in the recipe).
Carefully roll the lavash sheet into a roll and place the finished product on a greased baking sheet. Before putting it in a preheated oven, you need to brush the semi-finished pastries with a raw egg on top, shaking it first, and sprinkle with sesame or flax seeds.
Baking time at 180°C is about 20 minutes. As soon as the top of the roll is covered with a golden crust, it will be possible to remove it from the oven.
The roll will taste best when warm, so you don’t need to cool it too much. You can serve this original dish with barbecue sauce or another tomato-based sauce.
Lavash rolls with potatoes: step-by-step recipe with photos at home
Everyone will undoubtedly like these incomparable lavash rolls with potatoes. A crispy crust on the outside and a tender, satisfying filling on the inside come together for one amazing treat out of the oven. Unusual straws will appeal not only to adults, but also to children. The plate will be empty in a matter of minutes! The straws are delicious both hot and cold. You can serve them with sour cream sauce or spicy adjika. Although, everyone will choose their own addition to this culinary creation!
Grocery list:
- 500 grams of mashed potatoes
- egg
- 2 sheets of pita bread
- bunch of greenery
- 80 grams of cheese
- a tablespoon of sesame seeds.
Cooking sequence:
1. Prepare mashed potatoes in advance. Do it in the usual way. The main thing is that the puree is not too liquid. Cool the puree.
2. Grate the cheese on a fine grater. You can use any cheese, even processed cheese.
3. Chop the washed greens. Onions, dill, parsley, and cilantro work well.
4. Cut the pita bread into rectangles, 10 centimeters long and 7-8 centimeters wide. You can choose your sheet size and make the tubes a little larger or smaller. Then the filling will need to be adjusted to suit your lavash parameters.
5. Spread a tablespoon of mashed potatoes on a sheet of lavash. Do not fill out the entire sheet, just a little more than half.
6. Sprinkle with grated cheese and herbs. Wrap everything in a tube. Do the same with the remaining components.
7. Place the products on a baking sheet. Line the bottom of the baking sheet with parchment or foil. Grease with oil. This will provide some juiciness to the straws, so they will not be too dry.
8. Brush the top of the tubes with egg. Sprinkle with sesame seeds. Place everything in the oven, preheated to 200 degrees for 10-15 minutes.
9. Serve delicious potato tubes. Bon appetit!
