Veal meatballs
Veal is ideal in children's cooking. This young meat contains a lot of protein, easily digestible iron, and is very tender and mild in taste. If you are a vegetarian, you still should not deprive your children of meat dishes, as they contribute to the growth and formation of the child's body.
The resulting meatballs melt in your mouth. Even those children who don’t have many teeth yet will find it easy to swallow these juicy veal meatballs. In general, what else can I say, a dish that can kill two birds with one stone. Feed both children and adults. Read about the detailed preparation of meatballs and possible ways to get more benefits from them.
We all hear a lot now on the news that many fruits, vegetables, and meat contain components harmful to the body. If we talk about meat, then these are toxins, antibiotics and hormones. And in the case of fruits, vegetables and meat, you can reduce the harm from this by soaking in water for several hours. You can add the juice of half a lemon to 1 liter of water. If you don’t have time to do this for yourself, then you can at least try to do it for your child. I just read about this myself today, while looking for a list of May seasonal products. And I came across such useful tips. Fruits and vegetables contain nitrates due to processing with chemicals. And all this in order to get a faster harvest and larger fruits.
Of course, we are not sure about the proper nutrition of birds and animals, organic cultivation of crops, we don’t know what we process and in what quantities, we can only hope for the best and look for our weapons to fight in the current conditions. Or maybe not bother at all?
This recipe takes approximately a couple of hours to prepare. And if you do everything without interruptions and without distractions, then maybe less. We have a high-speed electric meat grinder; preparing minced meat has become a pleasure after purchasing it. A couple of minutes and you're done.
Ingredients:
- 500 g veal loin;
- a glass of steamed rice;
- 3 thin pieces of loaf;
- milk;
- 2 onions;
- 1 clove of garlic;
- 1 egg;
- 1 carrot;
- 1 tbsp. tomato paste;
- a small piece of butter;
- salt.
Preparation:
- If you decide to use the advice about soaking, then do it with your piece of veal first. I have a couple of fillet pieces. At the same time, rinse a glass of rice and soak it in water for about 30 minutes. And soak three pieces of loaf in milk.
- Cut the meat into small pieces, removing veins and possibly fat.
- We put the rice on the stove in the same water where we infused it. Bring to a boil, cover with a lid and place on low heat. Cook until done (about 15-20 minutes). Let's cook, that's a big word. At minimum heat, the rice will simply absorb liquid and increase in size.
- We twist the meat together with a small onion, soak the loaf three times. This will give us a delicate consistency. Add a raw egg, a little salt and mix the minced meat thoroughly.
- In a small cauldron, heat a small piece of butter, add grated onion and carrots. Stir and literally immediately fill half (maybe almost half) of the cauldron with boiling water. Add a clove of garlic, a tablespoon of tomato paste, bring to a boil and begin to lower the formed meatballs one at a time. They are about the size of a plum. This is what it all looks like. The meatballs should protrude slightly from the gravy. When all the meatballs are placed in the cauldron, cover with a lid, reduce the heat slightly (to medium) and cook for 40 minutes.
- After the specified time, the dish is ready and looks like this.

A tablespoon, kitchen scales, kettle, stove, colander, kitchen towel, deep bowl - 2 pieces, kitchen knife, cutting board, paper kitchen towels, deep saucepan with a lid (capacity 4 liters), slotted spoon, portion plate.
Today we will prepare very tasty children's meatballs that even adults will not refuse. So, first put a full kettle of purified water on high heat and let it boil. Then we spread a kitchen towel on the countertop, pour the required amount of rice onto it and sort it through, removing any debris in the form of pebbles. Next, transfer the grains to a colander, rinse thoroughly until clear water flows, and leave in the sink for 3-4 minutes. Then we transfer the cereal into a deep bowl, after a while pour boiling water from the kettle onto it so that it completely covers it, and leave it in this form to steam for 12–15 minutes. After this, put it back into a colander and keep the rice in it until use, this is about another 5-7 minutes. Without wasting a minute, use a sharp kitchen knife to peel the onions and wash them together with the sprigs of herbs. We dry these products with paper kitchen towels to remove excess moisture, place them one by one on a cutting board and continue preparing. We cut the stems of parsley and dill into several small pieces, and chop the onion very finely, so that the size of the pieces does not exceed 5–6 millimeters. Then put a deep saucepan with about three liters of purified water on medium heat and bring the liquid to a boil again. In the meantime, put fresh minced veal in a deep bowl, add rice that has already dried out, chopped raw onions, a raw chicken egg and, to taste, or better yet, a little salt. Mix everything with a tablespoon until smooth and proceed to the next step. Wet our hands in a small amount of regular running water and shake off excess droplets. After this, take a little less than one tablespoon of minced rice and meat into your palm. Roll it into a small ball with a diameter of 2–2.5 centimeters, transfer it to a clean, preferably smooth cutting board and form the rest of the meatballs in the same way. Now everything is simple! While the meat balls were being formed, the water in the pan began to boil. Season it with salt to taste, not forgetting that it is very harmful to a child’s stomach and is already present in small quantities in the minced meat. Then, using a tablespoon, very carefully, one by one, lower all the formed meatballs into the bubbling liquid. After boiling again, reduce the heat to a level between low and medium. Cook the meat balls, stirring occasionally with a slotted spoon until they float to the surface, this will take about 10-12 minutes. Next, using a kitchen towel, remove the pan from the stove. We drain almost all the water from it, leaving just enough liquid so that it reaches only half the level of the meatballs. Again, place the dishes that have not had time to cool down on medium heat and add three tablespoons of sour cream to the pan along with sprigs of herbs, that is, dill and parsley. Gently mix everything with a wooden kitchen spatula, cover the dish with a lid so that there is a small gap left, and simmer until fully cooked for 15 minutes, periodically turning the balls from side to side. Then turn off the stove, steep the meatballs in the resulting light sour cream sauce for 5-7 minutes, and you can begin tasting. After cooking, meatballs for children are infused a little in liquid sour cream sauce, then distributed in portions onto plates without boiled greens, cooled until warm and served as a second main course for lunch or the first dinner. Basically, they are served without any additions, but if you wish, if your baby is already a year old, you can practice mixed nutrition, that is, supplement a portion of meatballs with a piece of boiled potato, carrot, fresh cucumber, stewed or steamed broccoli or cauliflower, as well as squash caviar. Enjoy delicious food with your baby and don’t get sick!
Bon appetit!
– if you decide to serve meatballs with a side dish, then try not to give your baby foods that cause an increase in acidity and fermentation, for example, any legumes, fresh tomatoes, raw white cabbage and others;
– mainly for children’s meatballs they use minced meat from tender low-fat dairy veal, but if desired, you can mix it with chicken 1:1;
– when preparing minced meat, as well as boiling and stewing meatballs, do not add spices! Remember that children's bodies are very prone to allergies;
– a portion of a meat dish in a child’s diet per day should not exceed 100 grams, because your baby has just begun to explore the world of cooking, and such dishes are considered heavy, although quite nutritious, and also healthy due to their protein content.

Many faces of turkey
Excellent meatballs are made from turkey. Boil 150 g of cauliflower in salted water and divide into small inflorescences. Grind 400 g of turkey fillet with a medium onion through a meat grinder. Combine the meat with grated carrots, cauliflower, beat in a raw egg and salt to taste. If the minced meat turns out to be too liquid, add ground rolled oats to the desired thickness and let it swell. Now we make turkey meatballs for children, put them in boiling water and cook until done. They can be served with steamed vegetables or used to make a delicious soup. In any case, children will remain full and happy.
Food preparation
Although recipes vary in the amount and type of ingredients, it is important to adhere to a few basic principles of food preparation.
- Meat and fish.
A one-year-old baby is not yet ready to chew coarsely ground minced meat dishes. Veal and turkey should be passed through a meat grinder twice, and only when the child becomes confident in handling meatballs can the meat be ground in one go.
Fish and chicken have a more delicate structure; they do not need to be ground a second time. Please note: it is recommended to use a screw grinder rather than a blender, which turns the product into a pate.
If you plan to add rice to the meatballs or cook it as a side dish, you should give preference to round-grain varieties that cook well. Long-grain rice is drier and tougher; it “sticks” the minced meat worse.
In addition, small children do not chew hard rice well and swallow it whole or refuse the dish. An unchewed product is practically not absorbed by the body. Therefore, use short-grain rice and cook it with more water than the standard recipe, so that the product can cook a little longer than usual. If there is excess water left in the saucepan, drain it through a colander.
You can add carrots, cauliflower, zucchini or other vegetables to the minced meat. They make the dish more tender and juicy, as well as more healthy due to the presence of plant fiber and vitamins.
Please note: to prepare meatballs, use only those vegetables to which the baby’s body is already adapted, and they are guaranteed not to provoke an allergic reaction.
Vegetables with a delicate structure are chopped with a sharp knife; peeled carrots can also be finely chopped or grated on a fine or medium grater. You should not use a blender, since your task is to teach your baby to chew pieces of food. When cooking for children under one and a half years old, carrots and onions for meatballs can be ground in a meat grinder along with minced meat - they will be crushed into small pieces.
A standard ingredient that “glues” crushed foods together, preventing the meatballs from falling apart during cooking. If your child is allergic to egg whites, add only the yolk or replace the egg with a small amount of raw potatoes, finely grated.
A minimum of salt is added to children's dishes. Spices are best avoided as they can cause allergies. Hot spices are contraindicated for children's delicate stomachs. If you want to add some spice to the meatballs, add chopped parsley or dill to the minced meat - they are hypoallergenic and beneficial to the child’s body, as they have a beneficial effect on digestion.

Tips from housewives
Every housewife has her own secrets that help create real culinary masterpieces from seemingly simple recipes. Even when preparing ordinary beef meatballs in a double boiler, each one uses its own tricks to help speed up and simplify the cooking process:
- When preparing meatballs with rice, boil it first. This way the meatballs will turn out much juicier, and the cooking process will be reduced by 2 times.
- When steaming meatballs, place side dish or vegetables on the bottom tier. The juice from the meat will drain and soak the second dish, making it more juicy and flavorful. You can do the same with vegetables by placing them on the top tier. In this case, the meat will be soaked in vegetable juice.
- When preparing minced meat, do not skimp on spices. They will not only make future meatballs fragrant and tasty, but will also speed up the fat burning process.
- If you don't have a steamer, you can use a regular saucepan and colander. Simply pour the required amount of water into the pan, place a colander on top and place the meatballs in it. Cover with a lid.
- If you add greens and onions to the minced meat, this trick will definitely come in handy. Finely chop the greens and freeze. Add to the minced meat not defrosted. This will make the dish more juicy and tender.
- Make minced meat in which vegetables will predominate (this will significantly reduce the cooking time), form meatballs and freeze them. That's all. Now all you have to do is take out the dish at the right time and put it in the slow cooker for 15 minutes.
