Manna with pumpkin for family tea party. This recipe contains a minimum of ingredients - pumpkin, semolina, sugar and kefir.

I’ll tell you right away about the result - the manna turns out to be quite dense in consistency, so if I make manna with pumpkin again, it will only be with the addition of cottage cheese, for example.

Products:

  • Grated pumpkin – 300 g
  • Semolina – 250 g

How to cook manna with pumpkin:

Grate the pumpkin on a fine grater. (You can also grate it using a coarse grater - in this case, the dough will not be so clogged.)

Mix pumpkin with sugar, semolina, kefir. (The recipe also specifies baking powder for the dough, but I don’t see a big role in it, so you don’t have to add it.) We also grate the lemon zest. (If you make it with lemon syrup, you can also skip this step, since the syrup will overwhelm all the flavors.)

Place the resulting mixture in a mold and bake in an oven preheated to 190 degrees for 45 minutes.

By the time the manna is baked, you can make lemon syrup. The juice of one lemon is adjusted to 100 g with water and 100 g of sugar is added. Stir and boil for 3-5 minutes. (For my manna, this syrup turned out to be quite a lot, and the juice of 1 lemon was very cloying. Therefore, I slightly adjusted the grams in the recipe.)

So, pour the prepared syrup into the manna in the mold while it is warm. The pumpkin manna should absorb the syrup, but to speed up the process, I decided to pierce it with a fork.

  5. Turn on the multicooker in the “Baking” mode. For complete readiness, manna needs 45-50 minutes. Check readiness with a skewer or match.
  6. Preparing the impregnation. Heat the orange juice and add a little sugar. When the sugar is completely dissolved, let the impregnation cool.

  7. Fill the finished manna with syrup. Give the liquid time to completely absorb.
  8. Carefully place the manna on a plate. You can decorate with powdered sugar or whipped cream, but the cake is already sweet enough.

Mannik on kefir in the oven

Ingredients

  • 300 g pumpkin (grated)
  • 1 lemon
  • 250 ml kefir
  • 300 g sugar
  • 270 g semolina
  • 2 tsp. baking powder
  • 120 ml water

Preparation

  • Grate the pumpkin on a fine grater or chop using a blender. Add kefir, 100 g of sugar, semolina, baking powder and the zest of one lemon. Mix all the ingredients thoroughly and quickly so that the semolina does not have time to swell.

  • Preheat the oven to 180 degrees (it is advisable to do this at the stage of mixing the ingredients), grease the mold with butter or vegetable oil, transfer the dough into the mold, distributing it evenly, and bake for 40-45 minutes.

  • While the cake is baking, prepare the filling. Combine the remaining sugar with water and lemon juice in a small saucepan, bring the mixture to a boil and cook for 3 minutes. Let the syrup cool completely.

  • Pour lemon juice over the still hot manna without removing it from the mold, and let it soak for 30 minutes. Don't be alarmed if the cake literally floats in syrup! After half an hour, it will absorb the lemon dressing, transforming into a juicy and aromatic dessert.

  • Serve chilled pumpkin pie with hot tea, coffee or milk, optionally garnished with coconut flakes or confectionery sprinkles. Bon appetit!

The pumpkin is pre-stewed, simmered in a small amount of water without oil, or cooked in a microwave oven. The cake turns out moist and tender, it is delicious both warm and cold. Any sugar substitute can be used as a sweetener. It will take 45 minutes to prepare. The ingredients listed in the recipe will make 6 servings. How to cook at home

That's the whole set of products for manna. I have frozen pumpkin, cut into small cubes. If you have fresh pumpkin, grate it on a medium or coarse grater.

Combine semolina with sugar and pour in kefir. Mix.

Add pumpkin and dried cranberries. Cranberries can be replaced with raisins, cherries or other berries. Mix and leave for 20-25 minutes.

I prepared this manna based on Greek yogurt, which can be replaced with any other drinking or thick yogurt, or kefir. This time I added some walnuts, which go well with the pumpkin and the aroma and taste of cinnamon. I sprinkled the top of the manna with coconut flakes, which can be easily replaced with powdered sugar or a mixture of sugar and cinnamon - it will also be very tasty.

1. Peel the pumpkin and grate it on a fine grater, place it in a bowl.

2. Wash the lemon and grate its zest, add it to the pumpkin, as well as baking powder and vanilla sugar.

3. Pour kefir over the pumpkin, add salt, sugar (0.5 cups) and semolina.

4. Mix everything thoroughly and leave for 40-120 minutes, so that the semolina swells during this time.

5. Meanwhile, make lemon syrup: mix the remaining sugar with water and lemon juice, put the contents on the fire and boil the syrup for 2 minutes.
