  1. You need to heat 2 tbsp. l. olive oil over moderate heat in a wide skillet, arrange half the mushrooms in a single layer and cook, undisturbed, until edges begin to brown and begin to crisp, about 3 minutes.

  2. Then turn the mushroom pieces over and continue cooking, stirring occasionally, until all sides are browned and crisp, about 5 minutes more. Using a slotted spoon, transfer the mushrooms to a plate and sprinkle with salt.
  3. Next, you need to repeat the previous steps with the remaining mushrooms and vegetable oil.
  4. Once done, turn down the heat and return the mushrooms to the pan, add the shallots and cook, stirring frequently, until translucent and softened, about 2 minutes.
  5. Meanwhile, cook the pasta in a large saucepan of boiling salted water, stirring occasionally, until it reaches al dente (2 minutes before the cooking time indicated in the instructions).

  1. Place a large pot of salted water over high heat, wait until it boils, add the pasta and stir to prevent sticking. Next, you need to let the water boil again and cook the pasta, uncovered, for 9-10 minutes, until it is al dente.

  2. In the meantime, you need to melt the butter in a large separate (3-4 l) saucepan with a thick bottom, put chopped garlic in it, and leave for a few seconds.
  3. After this, add flour and whisk until all lumps dissolve. Next, the roux needs to cook for a minute or two.
  4. Then you need to slowly pour in the milk and cream (a quarter cup at a time), whisking after each addition, and increase the heat from low to moderate.
  5. When everything is mixed, you need to add 0.25 tsp. ground nutmeg, 0.5 tsp. black pepper and 0.5 tsp. Italian seasoning, and half each of the mozzarella and Parmesan, whisking until melted and incorporated into the sauce. Next you should add 0.75 tsp. salt (or more) and 2 tbsp. water (it is better to use pasta broth).
  6. The oven must be preheated to 200°C.
  7. Then you need to carefully but thoroughly mix the pasta with the sauce, ham, parsley and chopped green onions. After this, it is recommended to taste the dish and adjust the amount of nutmeg, salt, pepper or Italian seasoning.
  8. Place the pasta with the sauce and all the toppings in an ovenproof baking dish, sprinkle the remaining cheese on top and bake in the oven at 200°C for 10-15 minutes until the cheese is bubbly and lightly browned on top.

Ingredients:

  • Cream - 400 ml.
  • Pepper - 5 g
  • Pasta Paolo – 500 g
  • Salt - to taste
