  1. First, you need to grease the mold with vegetable oil and line it with 2 layers of pita bread so that their edges hang out.

  2. Next, in a separate container, you need to grate the Imeretian cheese and mix it with chopped herbs, add salt to taste, and divide into 3 parts.
  3. Then put 1 part of the cheese mass into the mold and cover it with the next sheet of pita bread, gathering it like an accordion so that it fits in the mold.
  4. Then, in the same way, 2 more layers should be formed, alternating the filling from the cheese mass and layers of lavash.
  5. After this, you need to turn up the hanging edges of the first layers.
  6. Next, melt the butter in a small container, mix it thoroughly with the eggs and add salt to taste.
  7. Then you need to cut the pie into portions in a mold.
  8. After this, you need to pour the resulting egg mass into the product, making sure that the impregnation gets into all the cuts.
  9. Next, you need to place the mold in a preheated oven and bake the product for about 40 minutes. at a temperature of 180 °C.

We call pita chips “baby chips.” And the backstory is this: the little granddaughter of a close friend saw adults crunching chips, of course she asked, but she was told that children were not allowed. How can this not be done? To prevent crying and calm the child, they promised to buy special baby chips. There was a faint hope that the baby would forget, but while visiting her grandmother, she demanded these children's chips. The gullible grandfather almost ran to look for them, and my creative friend coated the pita bread with butter with a pinch of salt and sugar, cut it and baked it in the microwave for a couple of minutes. I made the last batch of chips to my liking, no longer vegan, without hot peppers and with grated cheese.

6. Then you need to cut the sheets of pita bread so that they fit the baking dish or are slightly larger - in this case they will need to be slightly corrugated.

7. Next, place a layer of pita bread in the mold, and 3-5 tbsp on top of it. l. filling, distributing it evenly over the entire surface.

8. After this, the mass should be covered with the next layer of pita bread and the filling should be placed on top again. This must be continued until all the filler and all the interlayer sheets have been used, with the cheese layer being the last.

Then the form with the achma should be placed in an oven preheated to 200 °C and baked at this temperature for about 30 minutes.

What can I add?

Instead of kefir, you can add low-fat sour cream in the same volume to the filling for lazy achma.
